Full job description

Expected salary: $77,000 - $95,000 per year.
The Oriana, Orange is looking for a full time Chef for different levels for our busy food & beverage dining restaurants – including The Peacock Room and the Oriana Gardens, which also caters for a la carte menu breakfast and brunch, functions and events.
Chef responsibilities
* Grill experience and steak knowledge is a must
* Previous experience in a similar role
* Ability to maintain high and consistent standards
* Minimum 2 years' experience in commercial cooking
* Professionalism in all areas of the kitchen
* Good understanding of HACCP hygiene standards
* Experience in high volume venues is highly regarded
* Good communication skills and a commitment to personal development
* Maintaining a clean, organised and efficient kitchen environment
* Preparing and cooking food, minimising food wastage
* A keen eye for detail, and a willingness to learn
Senior Sous Chef responsibilities
* Planning innovative and exciting menus that will work well within our restaurant
* Keeping track of stock and ordering food supplies
* Providing estimates of stock and labour costs
* Overseeing quality of dishes at all stages from preparation to handing over to wait staff to ensure quality control.
* Working with managers, dietitians, kitchen staff, and wait staff regarding food preparation issues
* Teaching kitchen staff and apprentices food preparation techniques and cooking procedures
* Preparing, cooking, and presenting dishes
* Ensuring hygiene standards are being met and explaining to other staff as required
* Assisting in the selection of staff if needed and training new staff
* Freezing and preserving foods as per safety regulations
Qualifications
* Minimum a Certificate IV in Commercial Cookery (or an Australian AQF equivalent) or 1 year of relevant experience for Junior Chef position and minimum of 2 years' experience for Senior Chef and above positions.
* Be a hands‑on leader who get involved and who is capable of motivating and supporting the team
* Have a professional attitude with good manners and have excellent presentation
* Be able to work in a high‑pressure restaurant always delivering top‑notch service
These are full‑time positions.
The salary per year is $77,000 to $95,000 plus super depending on position, skills and experience.
