A little taste of your day-to-day
Every day is different, but you’ll mostly be;
•Break down whole cuts or carcasses as needed, ensuring minimal waste and maximum flavour
•Marinate, portion, and prepare proteins and vegetables for grilling
•Prep firewood or charcoal, and get the grill fired up ahead of service
•Maintain and monitor wood or charcoal grills throughout the day
•Adjust temperatures and fuel levels to ensure consistent heat zones for service
•Follow safety protocols when working with open flames
•Cook meats, seafood, and vegetables to order over open flame, ensuring accuracy and quality
•Monitor doneness, texture, and presentation with a focus on consistency
•Plate dishes with precision, maintaining visual and flavour standards
•Work closely with the Executive Sous Chef and kitchen team to coordinate timing and service flow
•Support other kitchen sections when needed, especially during peak service
•Maintain a clean, organised grill station throughout the shift
•Follow food safety standards, hygiene protocols, and kitchen policies
•Handle equipment with care, ensuring proper storage and maintenance
•Shut down grill safely and clean cooking surfaces
•Assist with end-of-day cleaning, stock rotation, and inventory checks
•Provide input for ordering, prep sheets, or upcoming menu items
What we need from you
•A minimum of 2 years’ experience in working the grill in high-quality, fast-paced kitchens
•Food Handling Certified preferred.
•Knowledge of HACCP
•Solid butchery skills and respect for whole-animal cooking
•Passion for natural fuel grilling (wood, charcoal, or open flame)
•Must speak local language(s)
•Ability to work varied hours/days, including nights, weekends and holidays, as needed.
