Delaware North Australia is hiring Sous Chefs to join our culinary team at Victoria Racing Club (VRC) at Flemington Racecourse. This is an exciting new partnership where Delaware North will support year-round hospitality. As a Sous Chef, you'll lead by example on busy services and event days, maintaining high standards of consistency, presentation, and pace. You'll play a hands-on role in mentoring the brigade, collaborating on menu execution, and ensuring every guest experience reflects our commitment to quality.

What will you do?
* Run day-to-day kitchen operations across restaurants and/or functions, ensuring high-volume production meets brand, quality, and timing standards
* Lead services and sections, coaching cooks and CDPs to deliver consistent plates at speed
* Uphold food safety and compliance, maintaining food safety plans and ensuring HACCP standards are always met
* Manage costs and inventories, assisting with rostering, ordering, stock rotation, and invoice handling to hit margin targets
* Partner with leaders (Executive Chef, culinary leadership, and operations) to refine menus, respond to feedback, and resolve service issues quickly
* Develop people, helping recruit, train, and motivate team members so they can perform at their best
More about you
* Diploma in Professional Cookery Level 5 or equivalent and Minimum Certificate III in Commercial Cookery
* Food Safety Supervisor Certificate desired
* Minimum of 3 years of monitoring food and labor cost, menu development, and costing
* Proven background in ordering and inventory procedures including cost controls and handling invoices
* Proficiency in menu development and stock management
* Competence in using business technology such as stock control systems, spreadsheets, and accounting systems preferred
Physical requirements
* Appropriate culinary qualifications and proven leadership experience in a commercial kitchen (restaurants, events/functions, hotels, or stadiums)
* Demonstrated capability with menu execution, prep planning, and quality control in high-volume environments
* Experience with cost control (food and labour), inventory, and ordering workflows
* Confidence using kitchen and business tech (stock systems, spreadsheets, basic POS/finance tools)
* Clear, collaborative communication and a genuine passion for hospitality and teamwork
