ABOUT US 
We are a busy Vietnamese restaurant dedicated to serving authentic, high-quality dishes in Hawthorn. We are seeking a reliable and motivated Sous Chef to support our Head Chef in leading the kitchen team, ensuring smooth daily operations, and delivering memorable dining experiences. 
MAIN DUTIES/RESPONSIBILITIES: 
- Assist the Head Chef in planning and designing menus that align with the restaurant’s vision, ensuring diversity, seasonality, and customer appeal. 
- Conduct food tastings, test and refine recipes, and ensure dishes meet quality, consistency, and presentation standards. 
- Monitor food preparation during service, ensuring timely delivery and appealing plate presentation. 
- Lead a specific section of the kitchen (grill and wok), ensuring dishes are prepared from scratch in accordance with standard recipes, flavor profiles, and presentation guidelines. 
- Oversee kitchen operations in the absence of the Head Chef, including staff supervision and shift coordination. 
- Manage kitchen stock: assist with ordering, check deliveries, maintain accurate inventory, and minimise food wastage. 
- Ensure compliance with food safety, hygiene, and occupational health and safety regulations at all times. 
- Supervise, train, and delegate tasks to kitchen staff, fostering teamwork and professionalism. 
- Assist in rostering kitchen staff to ensure adequate coverage and efficiency. 
- Help monitor and control food and labour costs to maintain profitability. 
- Support administrative aspects of kitchen management, including record keeping and reporting. 
- Perform additional duties as required to ensure smooth kitchen operations. 
QUALIFICATIONS & EXPERIENCE 
- Diploma of Hospitality Management or equivalent qualification. 
- At least one year full time of relevant experience in similar role 
Skills: 
- Strong leadership, teamwork, and communication skills. 
- Demonstrated knowledge in Vietnamese cuisine. 
- Excellent knowledge of food safety and hygiene practices. 
- Ability to work under pressure in a fast-paced kitchen environment.
