Essential Skills / Requirements
* Ability to produce bread and other baked goods using manual and/or industrial processes
* Knowledge of raw materials for dough, dough preparation times and procedures and various baking techniques
* Knowledge of recipes and production techniques for bread and baked goods
* Ability to operate electric, gas and wood-fired bread ovens
* Knowledge of health, safety and hygiene regulations for food preparation
* Ability to multitask
* Physical strength and stamina
* Organizational and planning skills
* Ability to remain calm and focused in a fast-paced environment
* Team spirit, with a customer-focused attitude
* Flexibility to work in early morning shift
* Willingness to work nights
* Excellent time-management skills
Main Tasks
* Diagnose and respond to product and process faults in bread and pastry
* Conduct final mould and final proof
* Scale and mould dough for intermediate proof
* Coordinate the forming, loading, baking, unloading, de-panning and cooling of batches of bread
* Empty, clean and grease baking trays, tins
Responsibilities
* Designing and improving recipes with head bakers.
* Measuring and combining ingredients and using mixers, blenders, heat sources, and other equipment to make baked goods such as:
SOURDOUGH BREADS, CONTINENTAL BREADS, BAGUETTES, BAGELS – SWEET DINNER ROLLS, FLATBREADS, FRUIT BREADS, SPECIALTY BREADS, FOCACCIA SLABS, PASTRY AND CAKE MIXES
* Mix, moulds and shape pastry dough and operate dough brake equipment
* Control mixing times and transfers dough to tempering rooms
* Control baking times and monitor the temperature and appearance of products
* Empty, clean and grease baking trays, tins and other cooking equipment
Remuneration: $76,530 - $85,000 per annum
