Job Description
The Opportunity:As an Executive Sous Chef, you will be second‐in‐command in the kitchen, working closely with our Executive Chef to maintain the highest culinary standards. You will lead daily operations and assist in the development and implementation of the culinary strategy, and ensure the smooth service for our restaurant, outlets, events and functions.
Key Responsibilities:
* Manage all members of the Chef / Kitchen Brigade on a daily / shift basis
* Support / Assist Food & Beverage Manager in the management of Front of House Activities
* Assist in the training of all staff including Chef's, Apprentices and Front of House Staff
* Assist Executive Chef with Rostering for all Kitchen Staff and participate in the recruitment of staff
* Lead kitchen operations in the Executive Chef's absence, ensuring consistency and excellence in every dish
* Manage inventory, ordering, and cost control in line with budget targets
* Ensure compliance with food safety, hygiene, and workplace and safety standards
* Contribute ideas for seasonal menu changes
Desired Skills and Experience
Requirements:
* Previous experience as a Sous Chef or Executive Sous Chef in a high‐quality dining environment
* Full availability including weekends and public holidays.
* Experience managing a team of Chef's, Apprentice Chef's and Kitchen Hands.
* Great attention to detail with an excellent ability to multi‐task.
* Trade Qualifications – Commercial Cookery Certificate or equivalent.
* Comprehensive knowledge of hygiene standards.
* Experience in checking requisitions and supplies of perishable goods.
* Ability to train and supervise.
* Sound management and leadership skills.
* High degree of communication skills.
