About the role
The Victoria Golf Club is seeking an experienced and talented Sous Chef to join our kitchen team. As Sous Chef, you will play a pivotal role in supporting the Head Chef in the smooth running of our renowned Club. This is a full‐time position based in our clubhouse in Cheltenham, Melbourne.
What you'll be doing
* Assisting the Head Chef in the day‐to‐day management of the kitchen, including overseeing staff, menu planning, and inventory control
* Preparing and cooking high‐quality dishes to the club's exacting standards
* Ensuring all food safety and hygiene regulations are adhered to
* Engaging in and overseeing the kitchen's WHS commitments
* Training and developing kitchen staff to improve their skills and efficiency
* Collaborating with the front‐of‐house team to deliver an exceptional dining experience for our members and guests
What we're looking for
* A minimum of 1‐2 years' experience as a Sous Chef or in a similar role within a high‐quality restaurant, hotel, or Club environment
* Proven track record of successfully managing a busy kitchen in high‐volume service and event catering
* Excellent culinary skills and a deep understanding of food preparation, cooking techniques, and plating
* Calm under pressure with excellent organisational skills and team‐building abilities, with the capacity to motivate and develop kitchen staff
* A natural leader who values teamwork, discipline and standards
* Passion for creating innovative, visually appealing dishes that showcase seasonal, locally sourced ingredients
* A recognised culinary trade qualification
