Job Description
Kidd & Co Group Pty Ltd in Wollongong NSW, is seeking an experienced, dedicated and qualified full-time Chef to join their dynamic team. The successful candidate will play a key role in contributing to our customer satisfaction and growth in the future.
1. GUEST EXPERIENCE Day to Day
* Following direction from Head/Sous Chef on food narrative, menu items, specials and trends applicable to our narrative
* Assists in tastings throughout the menu creation process.
* Ensures all equipment and crockery related to cooking is used appropriately.
* Once menus are completed, supporting Head/Sous Chef in ensuring menu is prepared as per prep lists and recipe cards, etc.
* Takes on board staff and guest feedback delivered by the head/sous chef to constantly improve and evolve.
2. BUSINESS ACUMEN & BUSINESS PERFORMANCE Day to Day
* Assist the Head/Sous Chef to ensure all stock is ordered, received, stored and managed in line with WHS, temperature and rotation requirements.
* Assists Head/Sous Chef in managing menu costings in line with profit margins, narrative, COGS and competitiveness.
* Assist the Head/Sous Chef in managing minimisation of wastage throughout the kitchen.
* Assist the Head/Sous Chef in completing accurate stock counts.
* Ensure proper use of kitchen equipment and consistently use all required PPE.
* Ensures all recipes (including specials) and necessary equipment are used correctly for service execution.
* Ensure all kitchen prep and close down tasks are followed and conducted in a timely efficient manner.
* Work in different sections efficiently & ensuring consistency.
* Ensures presentation, taste, temperature, freshness and quality of dishes presented to the headchef are maintained.
3. PROFESSIONAL DEVELOPMENT & LEADERSHIP Day to Day
* Contributes to performance reviews and follows recommended actions.
* Be involved in induction and ongoing training.
* Coordinates own growth/development with Head Chef.
* Executing daily operations and giving feedback to improve performance.
* Involved in training, developing and collaborates with head chefs to aid in their growth.

A remuneration package between $70,000.00 – $90,000.00 per year plus superannuation will be negotiated depending on skills and experience.
