Rocco Italiano is a vibrant Italian dining destination located on Rockingham Beach, known for its authentic Italian cuisine and welcoming atmosphere. The restaurant offers a menu focused on classic Italian favourites—think wood-fired pizzas, handmade pastas, quality antipasti and share plates, all prepared with a mix of locally sourced and imported Italian ingredients.
Having only been operating since August last year, we have quickly built a strong local reputation for our "divine" food and attentive service, with customers frequently praising both the flavours and overall experience. Open only evenings from Wednesday to Saturday and from 11:30am on Sundays, you don't need to compromise work with play.
We are seeking a qualified and experienced Pizza Chef / Pizzaiolo (Chef de Partie) to join our kitchen team on a full-time basis.
Position Description
The successful applicant will be responsible for the preparation and cooking of wood-fired pizzas in accordance with traditional Italian methods, ensuring consistency, quality, and efficiency during service.
Duties and responsibilities include:
* Preparing pizza dough, including mixing, kneading, and managing fermentation
* Hand-stretching dough and assembling pizzas using fresh ingredients
* Cooking pizzas in a wood-fired oven and managing oven temperature
* Maintaining consistent quality, presentation, and portion control
* Managing the pizza section during high-volume service periods
* Minimising food waste and monitoring stock related to the pizza station
* Ensuring compliance with food safety and workplace hygiene standards
* Working collaboratively with the kitchen team to ensure efficient service
* Follow directions from owners and senior management
* Assist with menu planning, food and labour cost estimation, and ordering supplies
Skills and Experience Required
* Minimum 2 years' relevant experience as a Pizza Chef / Pizzaiolo in a commercial kitchen
* Certificate III or IV in Commercial Cookery (preferred)
* Demonstrated experience with wood-fired ovens
* Strong knowledge of dough preparation, fermentation, and traditional Italian pizza techniques
* Ability to work effectively under pressure in a fast-paced environment
* Strong time management, reliability, and attention to detail
* Availability to work evenings, weekends, and public holidays
Salary and Conditions
* Annual salary of $75,000 – $85,000 + superannuation, depending on experience
