We are seeking a Fish / Seafood Filleter to join our seafood department. This hands‐on role involves filleting, deboning and preparing fresh seafood—particularly whole salmon—within a chilled production environment.

About the Role
The Fish/Seafood Filleter will work directly under the General Manager and be responsible for:
* Filleting, deboning and portioning whole salmon and other fish
* Trimming, skinning and preparing seafood with accuracy and consistency
* Packaging and labelling products to customer specifications and food safety standards
* Picking and packing daily customer orders
* Rotating and managing seafood stock
* Maintaining cleanliness and sanitisation of equipment and work areas

What We're Looking For
* Strong attention to detail and a reliable work ethic
* Comfortable working early mornings (5am–1pm)
* Ability to work in a chilled environment
* Experience in fish filleting is advantageous, but full training is provided
* Physically capable of manual handling and repetitive tasks
* Punctual, motivated, and able to work as part of a team
