Responsibilities
- Manage and supervise culinary staff including cooks and food preparation workers.
- Inspect levels of ingredients, raw food supplies and other materials to ensure optimum stock levels; place orders and requisitions for stock, frozen items, beverages and other materials.
- Inspect received products for quality and quantity; schedule food production and manage operations to use resources efficiently.
- Support kitchen operations to ensure timely service and maintain consistency in food preparation methods.
- Assign duties based on capacity and capabilities for ingredient prep, cooking and delivery of food items.
- Inspect cooking appliances for cleanliness, functionality and usability; perform stock rotation and inventory duties.
- Assist with pricing inputs for menu items based on labor, ingredients and overhead costs; manage relationships with distributors and resolve vendor issues.
- Maintain high standards of cleanliness, organization, storage and sanitation; ensure staff follow food safety practices and personal hygiene guidelines.
- Ensure food items are prepared according to established food preparation, portion control and pricing policies.
- Monitor kitchen operations and delegate tasks to ensure timely preparation and delivery of meals.
Requirements
- Strong knowledge of authentic Nepalese cuisine.
- Relevant qualifications in cookery or hospitality.
- At least 2 years of experience as a professional Chef in a commercial kitchen.
- Experience with traditional spice blending and marination techniques (minimum 2 years).
- Experience in preparing Nepalese marinades, curry pastes, chutneys and sauces from scratch (minimum 2 years).
- Experience preparing and cooking Nepalese dumplings and breads (minimum 2 years).
- Experience operating traditional clay cooking equipment and tandoor ovens (minimum 2 years).
- Ability to work with proteins such as beef, mutton, goat and pork.
- Passion for great food and presentation, with a commitment to food safety.
- Experience in kitchen operations, managing a team and training kitchen staff.
- Ability to work well under pressure; valuable stock control and wastage minimization skills.
