The Ritz-Carlton, Melbourne is seeking an experienced, passionate, and service-oriented Bar and Lounge Manager to lead the daily operations of our Lobby Lounge and Bar. This leadership role is ideal for an individual who thrives in a luxury environment and is committed to delivering the highest levels of guest satisfaction, operational excellence, and team engagement.
You will oversee all aspects of bar and lounge operations, including service delivery, team leadership, financial performance, and compliance with all food and beverage standards and regulations.
Key Responsibilities Operational Excellence
* Lead and manage the daily operations of the Lobby Lounge and Bar, ensuring smooth, efficient, and luxurious service experiences across all shifts.
* Implement and uphold Ritz-Carlton standards, beverage policies, and operating procedures across all service touchpoints.
* Manage beverage control including inventory, portion standards, par levels, cost management, and period-end reporting.
* Oversee compliance with all local, state, and federal beverage and liquor regulations.
* Maintain food handling and sanitation standards, ensuring a clean, safe, and inviting environment at all times.
* Collaborate with the culinary team to design, develop, and promote innovative beverage offerings and food pairings.
* Support the development and execution of beverage promotions and seasonal menus.
* Attend pre- and post-event or convention meetings to understand group needs and ensure seamless service delivery.
Financial & Business Management
* Monitor and analyze financial performance to achieve or exceed revenue and profitability goals.
* Participate in budgeting and forecasting for the Bar and Lounge, actively managing controllable expenses.
* Understand and apply key financial documents such as operating statements, payroll progress reports, and beverage cost analyses.
Team Leadership
* Recruit, train, and lead a passionate team of Ladies and Gentlemen, fostering a culture of excellence, collaboration, and service.
* Ensure effective staffing levels to meet guest needs and operational objectives.
* Conduct regular coaching and performance feedback sessions to support professional growth and maintain high performance.
* Oversee onboarding and training programs to ensure all team members are equipped to deliver exceptional service.
* Communicate clearly and effectively with the team, providing updates, direction, and recognition.
Guest Experience & Service Excellence
* Deliver and uphold the legendary service standards of The Ritz-Carlton brand.
* Interact with guests regularly to obtain feedback, anticipate needs, and ensure memorable experiences.
* Respond promptly and effectively to guest inquiries and complaints, ensuring positive resolutions and continuous improvement.
* Empower team members to take ownership of guest satisfaction and problem resolution.
* Review guest feedback, comment cards, and satisfaction results to identify opportunities for service enhancement.
About You
* Proven experience in a similar leadership role within a luxury hotel or premium bar/lounge environment.
* In-depth knowledge of beverage operations, cost control, and compliance requirements.
* Strong leadership, interpersonal, and communication skills.
* Passion for hospitality and a genuine commitment to creating unforgettable guest experiences.
* Ability to work effectively under pressure while maintaining a composed and professional demeanor.
* Flexibility to work evenings, weekends, and public holidays as required.
* Full-time working rights in Australia.
* Current Responsible Service of Alcohol (RSA) certificate required.
