Job Description
Placed.au is looking for a full-time Sous Chef for our client located in Warrnambool, Victoria. As a member of the team, you will be responsible for assisting the head chef, in managing daily kitchen operations, ensuring food quality, consistency, and presentation meet the restaurant's high standards. This role requires strong leadership, excellent culinary skills, and a passion and understanding of Thai cuisine.
Responsibilities
* Support Head Chef in the planning, preparation, and execution of the daily menu.
* Supervise kitchen operations and staff during service to ensure a smooth and efficient workflow.
* Prepare and cook high-quality Thai dishes, maintaining consistency in flavour, presentation, and portion standards.
* Contribute to menu development, including the creation of seasonal and special dishes.
* Collaborate with the Head Chef and Management on ingredient budgeting, cost control, and strategies to minimise food waste.
* Coordinate with kitchen staff regarding the maintenance, repair, and replacement of kitchen tools and equipment.
* Monitor staff rosters to ensure adequate staffing levels for daily operations, particularly during peak periods, holidays, and special events.
* Oversee inventory management and stock control, including coordination of supply orders to maintain appropriate stock levels.
* Ensure full compliance with food safety, hygiene, and occupational health and safety regulations.
* Assist in the recruitment, training, and mentoring of kitchen staff, fostering teamwork and professional development.
* Manage and oversee all kitchen operations in the absence of the Head Chef.
* Maintain a clean, well‑organised, and efficient kitchen environment at all times.
Qualifications
* Minimum of Certificate IV in Commercial Cookery or equivalent, or at least 3 years of relevant work experience in lieu of qualification.
* At least 1 – 2 years' experience, preferably in Thai or Asian cuisine.
* Strong knowledge of traditional Thai ingredients, flavours, and cooking methods.
* Excellent leadership, time management, and communication skills.
* Ability to work efficiently in a fast‑paced environment.
* Commitment to maintaining high standards of food quality and kitchen safety.
Salary
Salary Range: $70,000 - $80,000 p.a. excluding superannuation.
