About the Position
We are looking for a highly skilled Chef de Partie with experience in Dalmatian/Dubrovnik regional cuisine. This is a rare and specialised role requiring expertise in traditional Adriatic cooking methods, homemade breads, stocks, and seafood preparation.
Key Responsibilities
* Prepare and cook authentic Dalmatian dishes including seafood risotto, octopus, porchetta, wild boar, and other traditional Adriatic dishes.
* Bake a variety of homemade breads and traditional baked goods.
* Prepare traditional stocks, broths, and bases essential to Dalmatian cuisine.
* Fillet, portion, and cook seafood; butcher cuttlefish and preserve ink sacs.
* Apply traditional cooking methods such as slow roasting, open‐flame grilling, frying, marination, and preservation.
* Maintain high standards of food quality, hygiene, and consistency.
* Work effectively in a small, boutique kitchen environment.
Essential Skills and Qualifications
* Certificate IV in Commercial Cookery (Australia) or equivalent.
* Minimum 3 years of professional experience in general restaurant kitchens.
* Minimum 18 months of professional experience in Dalmatian/Dubrovnik cuisine under the supervision of recognised Croatian chefs.
* Robust recommendation letter(s) from established Croatian chefs verifying training and skills.
* Skilled in homemade bread baking, preparation of traditional stocks and bases, fish filleting, butchering cuttlefish, and preserving ink sacs.
* Proven ability to replicate authentic Adriatic cooking methods.
* Knowledge of Dalmatian culinary traditions and ingredients.
