**The Company**
With a portfolio to over 70 brands and venues this company is opening a beautiful Italian Restaurant along the Great Ocean Road in Lorne Victoria. We are on the search for a Sommelier seeking a new venture!
The Head Sommelier is responsible for enhancing the guest experience through wine list development and staff training whilst ensuring controls and growth are met in a venue.
**What you bring to the role**
- Responsible for total guest experience within venue/s including but not limited to; service standards and product presentation of wine.
- Responsible for implementation of brand partnership agreements as set by the Group Sommelier.
- Responsible for the effective development (product knowledge, job related tasks and performance) of all sommeliers within their team to meet and exceed business objectives through individual and team performance.
- Responsible for effective people practices within sommelier team including, but not limited to; recruitment, onboarding delegating but controlling all induction, employee engagement, performance, experience and offboarding.
- Responsible for effective financial management ensuring costs (COGS, Labour, Comps, Discounts, wastage) are managed and sales budgets and profit expectations are met across the wine portfolio with a focus on driving spend per head. Insuring the targets are met and revenue exceeded on a monthly basis.
- Responsible for adhering to effective stock management processes within the venue and precinct including, but not limited to; ordering, receipting, storing and stock rotation.
- Responsible for food and beverage pairing to enhance the customer experience.
