The Tasmanian Turf Club is looking for an experienced and passionate Head Chef to lead our kitchen through an exciting annual racing season and a relaxed off-season where you can recharge and enjoy real work–life balance.
About the Role
This role oversees all kitchen operations across racing events, corporate functions, and club dining. You will design and deliver high-quality menus for large functions, ensuring exceptional presentation and taste.
The racing season offers fast-paced, rewarding work, while the quieter months provide generous time in lieu and a chance to reset.
As we are not a conventional 7 day a week operation, we are open to discussing the hours required onsite so you can enjoy some days working from home.
Responsibilities
* Lead, coach and inspire a high-performing kitchen team.
• Develop seasonal, on-trend menus that align with our premium event style and guest expectations.
• Oversee end-to-end kitchen operations including service execution, pre-production, logistics, event timelines and service flow.
• Work collaboratively with Event Managers, suppliers and leadership to deliver seamless guest experiences.
• Manage stock control, procurement, supplier relationships and cost efficiencies.
• Ensure the highest standards of food safety, hygiene and compliance.
• Drive a culture of excellence, innovation, teamwork and continuous improvement.
About You

We're looking for someone with:
• Minimum 3 years' experience Head Chef or Senior Sous experience in high-end events, banquets, catering or premium hospitality.
• Proven ability to manage kitchen operations for volume-based service without compromising quality.
* Strong leadership and communication skills
* Highly organised, efficient, and able to manage a team
* Confident in stock control, ordering, and cost management
* Passionate about creating great food and memorable experiences
* Current Food Safety Supervisor certification (or willingness to obtain).
