Line Chef Moonlight Hibachi Grill and Wine


The Venue

Moonlight is a contemporary hibachi grill and wine bar located near the Byron foreshore. The menu showcases classical Japanese cuisine with bold and flavorful twists. A sophisticated cocktail menu and selection of biodynamic wines are also available.

We are seeking enthusiastic Chefs to join our team.


Position Summary

The Line Chef sets up stations, prepares food to exact specifications, and guides junior chefs. You will maintain a solid understanding of all sections in the kitchen, working under the direction of the Head Chef and Sous Chef. This role involves setting up and stocking stations, maintaining a positive approach, and executing tasks with accuracy and speed.


About You

* Sound communication skills
* Experience in a fast-paced, high-volume venue (essential)
* A positive approach to fellow team members and FOH staff
* Japanese ingredient experience preferred but not essential
* Punctual, reliable, and able to operate well under pressure
* Able to cook and prepare dishes according to company specifications
* Committed to maintaining food and hygiene standards
* Able to follow recipes and specs to company standards

Key Responsibilities

* Adhere to Standards: Maintain consistent quality, service, presentation, and cleanliness in the kitchen.
* Staff Training and Development: Train junior chefs and maintain a culture of continuous improvement. Ensure compliance with all company procedures.
* Communication: Facilitate positive communication between FOH and BOH teams.
* Food Safety: Ensure kitchen staff are trained in Moonlight's Food Safety program. Collaborate with the Head Chef on WHS aspects of the BOH.
* Auditing: Work towards high scores in inspections and audits conducted within Arcade Agency.
* Teamwork: Collaborate with managers to maximise the restaurant's potential.
* Supplier Management: Monitor food costs, manage supplier communication, and adjust GP as needed.

This role may be shared between Moonlight Hibachi Grill and Wine and our sister venue, The Smoking Camel.
