The Old Canberra Inn is a Canberra insitution and commonly known as the best pub in town. The kitchen is BUSY - 300 to 600 covers per day and accounts for 50% of our total sales.
What are we looking for:
* A hands on chef who can manage a high volume kitchen
* A chef with a passion for food to take our specials to the next level
Key Responsibilities:
* Manage a team of 10 chefs
* Provide great quality meals consistently
* Ensure compliance, including Food Safety and WHS standards
* Control food and wage costs to meet set targets
* Change the menu and specials composition seasonally
* Train and develop your team
* Ensure all ordering, invoices and stocktakes are done accurately in our Costimator program
* Resolve customer complaints and maintain a pleasant and respectful work environment.
Qualifications:
* Proven experience as a Head Chef or Sous Chef in a busy environment
* Strong leadership skills and the ability to work under pressure.
* Excellent communication skills
* The ability to organise the kitchen for success
* A passion for cooking and customer satisfaction.
* Flexibility to work nights, weekends, and public holidays.
