About the Role
Sea West WA Pty Ltd is seeking a Marine Chef to join our growing team, delivering premium seafood dining experiences aboard our award-winning cruise vessels in Mandurah and Rottnest Island.
This is a rare opportunity to work in a unique on-water environment, preparing high-quality, high end seafood for our signature lunch, dinner, and charter cruises. You will work closely with our Head Chef and onboard crew, cooking in front of guests and playing a key role in creating memorable culinary experiences.
This role suits a confident, hands-on chef who enjoys working in a fast-paced, guest-facing environment, has seafood and high-end dining experience and and takes pride in food quality, presentation, and teamwork.

Key Responsibilities
* Prepare, cook, and present high-quality seafood dishes for cruise guests
* Work across both land-based kitchen facilities and onboard vessels
* Assist with menu execution and development alongside the Head Chef
* Maintain high standards of food safety, hygiene, and cleanliness at all times
* Ensure compliance with food safety legislation and internal procedures
* Monitor food quality throughout preparation and service
* Assist with ordering, stock control, storage, and waste minimisation
* Engage positively with guests, including explaining dishes and interacting during service
* Work collaboratively with marine crew to ensure smooth service delivery
* Follow all workplace health and safety and marine safety procedures

About You
You will be a motivated and capable chef who enjoys working in a dynamic marine environment. You bring professionalism, reliability, and a passion for quality food.
Essential Requirements:
* Minimum 3 years' experience working as a chef or cook in a commercial kitchen with preference for high end kitchen experience
* Strong experience with seafood preparation and cooking
* Solid understanding of food safety and hygiene practices
* Ability to work weekends, public holidays, and peak seasonal periods
* Comfortable working on boats and in a moving environment
* Basic swimming ability required for safe operation in the marine environment
* Strong communication skills and a positive, team-focused attitude
* Current Food Safety Certificate (or willingness to obtain)
* Certificate IV in Commercial Cookery or equivalent culinary qualification
* Legal right to work in Australia (sponsorship could be considered for the right candidate, after a trial period)
Highly Regarded (but not essential):
* Experience in high-end or premium dining environments
* Front-of-house or guest-facing experience as this role requires cooking in front of and interacting with guests
* Some experience of working on boats
* Responsible Service of Alcohol (RSA) certification
* Asian language skills (beneficial for guest interaction)
* Living in or near Mandurah for ease of rostered work
