Nyaal Banyul Geelong Convention and Event Centre – Stewarding Manager. We are seeking a highly skilled Stewarding Manager to lead and manage the full scope of Stewarding operations at Nyaal Banyul Geelong Convention Centre. This role ensures the effective management of all stewarding activities—including kitchen support, mise en place for functions, servery operations, dishwashing, and event setup and pack-down. The position is accountable for planning operational requirements, rostering, training, and supervising the stewarding team to ensure consistently high standards of cleanliness, efficiency, and service delivery. This role will work on a rotating 7-day roster, which may include early mornings, late evenings, weekends and Public Holidays. There may also be a need for infrequent contact out of business hours due to employee and client demands.

About the Role
Lead, motivate, and manage the stewarding team to deliver exceptional support across all kitchen and event operations. Oversee the preparation, quality control, and timely delivery of mise en place for all functions, ensuring operational readiness and excellence. Coordinate efficient kitchen and back-of-house support during event setup and pack-down, maintaining seamless workflows and operational continuity. Ensure all dishwashing, servery, and storage areas are maintained to the highest standards of hygiene, safety, and compliance with regulatory requirements. Drive the training, development, and performance management of Stewarding staff, ensuring team members consistently meet operational, safety, and service excellence standards. Lead the onboarding and induction process for new team members, fostering a strong understanding of expectations, procedures, and organisational culture from day one. Ensure full compliance with hygiene protocols and food safety standards, taking prompt corrective action as required. Maintain accurate HACCP documentation and oversee adherence to all critical control points. Oversee stock levels and maintenance of all crockery, cutlery, glassware, and kitchen equipment, including participation in scheduled stocktakes. Effectively manage departmental budgets by consistently controlling costs and expenses to achieve financial targets.

Qualifications
* Essential
* Experience in large‑scale kitchen stewarding operations.
* Experience in the delivery of outstanding customer service in a 5‑star environment.
* Demonstrated experience in building and leading high performing teams, including training and rostering.
* Strong understanding of HACCP and OH&S compliance.
* Proficient computer literacy (MS Office, Teams, Rostering systems).
Required Skills
* Experience using PayGlobal or similar workforce systems.
* Experience leading a highly casualised workforce.
* Prior involvement in sustainability programs.
* Strong understanding of procedures relating to HACCP.
