About The Role:
You will assist in ensuring the execution of room setup, service delivery and sequence according to contractual obligations, guest expectations and company established policies and procedures. This role is 'hands on', working as part of a team to provide efficient food & beverage service for service periods.
- To organise and control the day-to-day operation of the food and beverage facilities of the Hotel.
- Successful operational delivery of all events adhering to finalized and approved BEO's and maintaining a consistent satisfactory service delivery standard for daily breakfast meal periods.
- Assist the Manager to prepare accounts ensuring accurate charges are posted on a timely basis.
- Ensure that constant and updated communications are maintained and that all relevant departments are aware of their responsibilities in association with the function activities on a daily basis.
- Be responsible for smooth, efficient and courteous service to the guest during functions.
- Ensure that all function rooms are set up as per function sheets.
- Ensure that the function sheets are fully understood by all function staff and that the function sheet is the most up to date.
- Assist the Food and Beverage Manager with the training and development of all function and breakfast staff. Maintains a detailed training log.
- Be totally familiar with all operations concerning breakfast & event service delivery.
- Liaise closely with the kitchen managers regarding the activities of the day with particular emphasis on final numbers, menu changes, food service times etc.
- Ensure all staff are fully conversant with the activity of the day including type of food and beverage being served, consumption limit, beverage packages and charging procedures.
- Follow up on all guest comments, requests and complaints and inform the Food and Beverage Manager of all such matters.
- On a weekly basis liaise closely with the Food and Beverage Manager regarding all function activity, changes, staffing level problems and suggestions.
- Ensure all equipment is in full working order at all times.
- Ensure that all function rooms are clear and secure each evening post event and that the events store areas are clean, tidy and secure at all times.
- Ensure that no beverage or food stuff is left in any function areas after any function and that all leftovers are returned to the kitchen at the end of each evening.
- Ensure all Events areas are maintained in relation to:
- cleanliness, sanitation and hygiene
- operating equipment
- fire precautions and safety
- All other duties as required by your Manager that may include:
- Delivery of service standards excellence through clever development and training
- Ensure cleaning and maintenance of outlets, work areas, tableware, utensils and other materials and equipment used by restaurant, bar and room service.
- Maintain currency of RSA certification, amendments and updates and adhere to RSA principles.
