The Lakes Resort Hotel, an award-winning family-owned and operated business located on the serene shores of West Lakes, South Australia, offers 72 accommodation suites with room service. Featuring 2 quality food outlets and a function centre capable of hosting events for up to 300 guests, you'll be able to showcase your culinary talents at our signature restaurant Tunki Ceviche & Woodfire Grill, Knots Kitchen, Lakes Bar for all-day dining, room service, and creating menus for weddings and corporate events. Join our team of skilled professionals in two main kitchens and two satellite function kitchens.
The Role
Are you an experienced Executive Chef looking to showcase your creative culinary and inspiring leadership skills within a large-scale, high-end luxury hotel environment?
We are a Luxury hotel delivering elevated dining experiences across our high-volume restaurants, award-winning bars, hotel in-room dining, busy events, meetings, and conferencing departments. Reporting to the Hotel Director/General Manager, you will be accountable for the operations of the entire culinary division, managing all aspects of daily operations to ensure the highest standards of culinary experiences, brand standards, culinary performance, and profitability are achieved.
Key responsibilities include but are not limited to:
· Planning and controlling of kitchen operations.
· Responsible for proper, efficient, and profitable Kitchen operations.
· Prepare menus for all sections liaising with management.
· Develop, prepare, and gather feedback on new recipes before integrating them into the menus.
· Adjust components of food menus and menu pricing structures with Management.
· Responsible for providing quality meals to all dining areas of the Hotel. The Executive Chef is ultimately responsible for the standard of all food leaving the kitchen.
· Monitor food requisitions and store items. Ensure ordering is completed and that all stock received is checked off and invoice signed by Exec Chef as well as by staff when received.
· Responsible for Monthly stocktake.
· Clean and maintain designated and assigned food areas – ensuring all relevant food health and safety requirements are met.
· Ensure all staff follow prescribed recipe guidelines.
· Monitor rotation of all food items and provision of all back production.
Hours of work
· Offering flexibility across a 7 day roster.
About You
· At least a Diploma in a relevant field or 3 years of relevant work experience to substitute for the qualification.
· 3+ years' experience at Executive Chef or Head Chef level.
· Must have previous experience in premium venues, managing multiple outlets, and cross-functional teams.
· Proven experience achieving brand standards at a high luxury or similar level.
· Experience in a professional commercial kitchen with a passion for culinary arts.
· Experience in a commercial kitchen with proven success in driving Sustainability/ HACCP / Food Safety / WHS and QA.
· A flair and passion for modern cuisine and developing diverse, innovative concepts which differentiate our brand in the market.
· A self-starter and natural leader, excelling at developing an inspired, engaged culinary team.
