Overview

Chefs (Head Chef and Sous Chef) Australia Hotel and Accommodation Pty Ltd (Australia Hotel Fremantle) is seeking an experienced Head Chef and Sous Chef to join our kitchen team in Fremantle, Western Australia, with an immediate start. Our restaurant specialises in Mexican and Australian cuisine and is committed to delivering high quality food and maintaining professional kitchen standards. Cuisine: Mexican and Australian Cuisine Location: Fremantle WA 6160 Employment Type: Full Time, Permanent, Ongoing Remuneration Range: $77,000 to $84,000 per annum plus superannuation.

Head Chef – Key Responsibilities
* Plan and develop menus featuring Mexican and Australian cuisine
* Manage kitchen operations, including budgeting, cost control, and procurement
* Supervise kitchen staff and coordinate food preparation during service
* Ensure food quality, presentation, and consistency across all dishes
* Maintain compliance with food safety and hygiene standards
* Hire staff
Sous Chef – Key Responsibilities
* Assist the Head Chef with daily kitchen operations and menu preparation
* Supervise kitchen operations in the absence of the Head Chef
* Prepare and cook menu items according to recipes and quality standards
* Support staff training and ensure efficient service during operating hours
* Maintain food safety, hygiene, and proper ingredient storage
* Assist with hiring
Key Skills
* Budgeting and cost control
* Team leadership and staff supervision
* Menu planning and food preparation
* Inventory and stock management
* Strong knowledge of food safety and hygiene standards
* Ability to work in a fast-paced kitchen environment
Qualifications and Experience
* Diploma or higher qualification in Commercial Cookery (or related field), or at least three years of relevant industry experience
* At least one year of full time experience in a similar chef role
* Ability to provide 2 recent industry references
* Have full time work rights in Australia
* Able to work on weekends including public holidays.
