The Role
We are seeking a Full-Time Pastry Chef to work the early morning shift, Monday to Friday, 4:00 AM – 1:00 PM .
Our ideal candidate will initially step into our pastry room, taking over from a long-term team member and being responsible for making our all-butter shortcrust, puff and sweet pastry from scratch – approximately 1,000 kg per week .
However, we are open to two possible pathways, depending on your experience:
* Pastry Room Specialist
o Focus on scaling, mixing and laminating our shortcrust, puff and sweet pastry from scratch.
o Maintain consistency, quality and efficiency across high-volume weekly pastry production.
* Production Pastry Chef (with pathway into the pastry room)
o Start in the main production kitchen, working across our range of quiches, pies, tarts, slices and bar cakes.
o As you learn our products and systems, you'll have the opportunity to be trained into the pastry room role over time.
We're looking for someone who is excited by the idea of working with large-volume, from-scratch pastry and being part of a small, committed team.
Key Responsibilities
* Produce, from scratch, all-butter shortcrust, puff and sweet pastry (training provided on our systems where needed).
* Mould, shape and line pastry into tins for quiches, pies and tarts.
* Prepare and bake a variety of pastry goods including quiches, pies, sweet tarts, slices, and bar cakes (main kitchen role).
* Monitor baking times and temperatures to ensure consistent, high-quality results.
* Coordinate the baking process, including forming, loading, baking and cooling of pastry batches.
* Decorate cakes, tarts and slices with icing and garnishes where required.
* Operate baking machinery and equipment safely and efficiently.
* Clean and maintain food preparation areas, trays, tins and machinery.
* Participate in HACCP and food safety requirements (training provided).
About You
To thrive in this role, you will:
* Be a qualified Pastry Chef (Certificate IV in Patisserie or equivalent).
* Have a minimum 2–3 years' experience in a similar role.
* Bring wholesale or commercial baking experience in a high-volume production environment.
* Be confident working with from-scratch pastry and/or keen to develop strong skills in this area.
* Work efficiently and cleanly in a fast-paced environment.
* Follow instructions and collaborate well with your team.
* Demonstrate excellent attention to detail and a commitment to quality.
* Maintain a positive, proactive attitude and a willingness to learn.
* Have full Australian work rights .
