Overview
Costi Seafoods is seeking a skilled Fish Cutter to join our team full time. You will be responsible for expertly filleting fish, opening oysters, and preparing seafood to high standards of quality and freshness. This role requires precision, speed, and a strong understanding of food safety practices.
Responsibilities
- Fillet, trim, and portion fish according to product and customer specifications
- Open oysters and shellfish as required
- Inspect seafood for quality, removing bones, scales, or defects
- Maintain cleanliness and sanitation of the cutting area and tools
- Follow food safety, hygiene, and health & safety procedures at all times
- Assist with inventory, stock rotation, and waste minimisation
- Work collaboratively with retail and kitchen staff to support smooth operations
Qualifications
- Proven experience as a fish cutter, seafood processor, or similar role
- Strong knife skills and knowledge of seafood handling techniques
- Attention to detail, speed, reliability, and a good work ethic
- Ability to work in a refrigerated environment and handle physical work
- Flexibility to work full-time hours including weekends
