Keyho Meats Pty Ltd t/as MC Butchery are looking for a skilled Butcher to provide high-quality meat and associated butchery services to our customers at our retail premises in Moranbah, Central Queensland.
The successful Butcher will perform quality inspections, use meat grinders, knives, saws, and other tools to cut meat down into smaller portions, weigh, price, and package cuts, and ensure that displays and signage are attractive and eye-catching. They will also speak to customers to determine their needs, provide advice regarding proper cuts of meat and preparation methods, and coordinate pickups or deliveries.

Full-time 38/h per week, plus some Saturdays
Salary: $75,000 plus superannuation
Qualifications & Experience required: Cert III or equivalent in Meat Processing (Butchery, Small Goods Making ) plus at least 1 year experience or 3 years of relevant experience.
Task and Duties include:
• Cut, grind, and prepare meats for sale by removing bones, trimming fat, and cutting, mincing, and grinding meat to specific shapes and sizes for display or custom orders.
• Prepare crumbed cuts of meat, marinate, season, and cure special cuts as needed.
• Select and prepare meat for smallgoods production.
• Operate machines for grinding, mixing, mincing, and tenderizing meat; operate sausage filling machines, smoking chambers, cooking kettles, and vats.
• Create seasonings and pickles by mixing spices, salt, and other ingredients.
• Clean and maintain tools and equipment, ensuring displays and signage are accurate, attractive, and aligned with store standards.
• Weigh, package, price, and display products.
• Keep accurate records of budgets, inventory, and supplier orders; prepare and submit receiving records on time.
• Perform quality inspections on meats and other products.
• Manage and negotiate orders with suppliers according to anticipated sales and seasonal needs.
• Ensure adherence to food safety and sanitation controls.
• Provide excellent customer service, greeting and advising customers, answering questions, and accepting orders or payments; assist in menu planning, scheduling, and estimating food production costs.
• Coordinate order pickups or deliveries and assist with catering or special orders as needed.
• Maintain back stock organization, cleanliness, and rotation to prevent shrinkage, damages, and waste.
• Follow daily cutting lists and complete work within the allotted time.
• Conduct product handling to control shrinkage, ensuring proper product rotation and waste reduction.
• Receive, inspect, and store meat upon delivery, confirming quality standards.
• Direct or guide customers to items in the store, make announcements for freshly prepared products and sales, and assist with product suggestions.
• Train employees on job responsibilities and safe operating procedures.
• Prepare, stock, cut, weigh, and wrap meat for the display area.
• Focus on team productivity, using up-time as a key metric for success.
