As we continue to build an extraordinary team, we’re searching for a talented and experienced Executive Sous Chef – Banquets & Events to lead the way in crafting exceptional dining experiences for our events, functions, and special occasions.
Working closely with the Executive Chef, you’ll be responsible for managing the day-to-day culinary operations for all banqueting and event services. From elegant weddings to corporate gatherings and bespoke private dinners, you’ll ensure every event is executed with precision, creativity, and purpose. Key Responsibilities
* Support the Executive Chef in managing all culinary aspects of banquets and event operations
* Oversee the preparation and execution of all function menus, ensuring quality, consistency, and timely delivery
* Develop seasonal, locally inspired menus that accommodate diverse dietary needs and align with the 1 Hotels ethos
* Supervise, train, and mentor kitchen staff, ensuring high performance, team cohesion, and professional development
* Collaborate with the Events and Food & Beverage teams to ensure seamless execution of all functions
* Monitor inventory levels and place orders in line with forecasted business levels
* Manage food and labour costs in line with budget expectations
* Ensure compliance with all health, hygiene, and food safety regulations, maintaining a spotless kitchen environment
* Uphold 1 Hotel’s sustainability standards in sourcing, waste reduction, and kitchen practices
Skills & Experience
* Minimum of 5 years’ experience in a senior kitchen leadership role, preferably in high-end banqueting or event catering
* Formal culinary qualifications (Certificate III or IV in Commercial Cookery or equivalent)
* Proven ability to manage large-scale food production while maintaining attention to detail
* A strong understanding of event flow, production planning, and plating logistics
* Excellent leadership skills with the ability to build, train and motivate a team
* High-level communication, planning, and organisational skills
* Strong knowledge of food safety standards and HACCP procedures
* A passion for sustainability, innovation, and hospitality excellence
Qualifications & Requirements
* Trade qualification in Commercial Cookery or equivalent
* Proven supervisory or sous chef experience in a high-volume setting
* Availability to work across a rotating roster including evenings, weekends, and public holidays
* Understanding of sustainability principles and interest in eco-conscious operations
