Your Key Responsibilities
* Preparing, baking and finishing a wide range of artisan breads, sourdough products, laminated pastries and specialty baked goods.
* Managing and maintaining natural sourdough starters and overseeing long fermentation processes.
* Developing and refining new recipes in line with seasonal ingredients and business objectives.
* Monitoring dough quality, proofing times, oven temperatures and baking schedules to ensure product consistency.
* Supervising junior bakers and bakery assistants, providing training and guidance where required.
* Ensuring strict compliance with food safety, hygiene and workplace health and safety standards.
* Managing daily production schedules to meet retail and wholesale demand.
* Monitoring stock levels of raw materials and coordinating ordering to maintain adequate supply.
* Maintaining a clean, organised and productive workspace.
Skills and Requirements
* Minimum 3–5 years' experience in a commercial bakery environment, preferably in artisan or sourdough production.
* Strong knowledge of dough fermentation, lamination techniques and baking science.
* Experience working with high‐volume production while maintaining premium quality standards.
* Extensive experience in leading and mentoring junior staff.
* Strong organisational and time‐management skills.
* Ability to work early mornings, weekends and public holidays as required.
* A genuine passion for artisan baking and product innovation.
* Mandarin‐speaking is advantageous.
