About the Role We are seeking a motivated and detail-oriented Meat Quality & Sampling Technician to join our quality and production team. This position is responsible for evaluating carcasses and meat products to determine lean meat content, yield, and quality, ensuring compliance with AUS-MEAT standards, food safety requirements, and customer specifications.
The role plays a vital part in maintaining product consistency and supporting production efficiency through accurate sampling, grading, and data reporting.
Key Responsibilities
* Conduct carcass inspections to assess lean meat content, fat distribution, and marbling.
* Perform CL (Chemical Lean) testing – sampling 1 in every 10 cartons or at least one test every 15 minutes.
* Use CL drilling templates for accurate sampling and ensure hygiene standards are met.
* Record carcass weights, grades, and yield data with precision.
* Prepare duplicate 30g samples for microwave testing and calculate CL% using reporting forms.
* Identify, report, and manage non-conforming products as required.
* Maintain a clean, sanitised workstation and ensure all tools and equipment are sterilised between tests.
* Complete all required QA documentation and reports accurately and on time.
* Follow all workplace health, safety, and hygiene procedures in processing areas.
Skills & Attributes
* Strong understanding of carcass grading, lean measurement, and yield testing.
* Excellent attention to detail and accuracy in data recording.
* Knowledge of AUS-MEAT standards, HACCP, and food safety compliance.
* Team-oriented with strong communication and problem-solving skills.
* Physically fit and comfortable working in cold, fast-paced environments.
Qualifications & Experience
* Certificate or training in Meat Processing, Meat Science, or Meat Inspection (advantageous).
* Prior experience in abattoir operations, carcass grading, or quality inspection preferred.
* Familiarity with CL testing procedures and food safety systems.
