We are seeking a passionate and driven Assistant Food & Beverage Manager / Restaurant Manager to support the leadership of our F&B operations and help deliver seamless, memorable guest experiences. Reporting to the Food & Beverage Manager this is an excellent opportunity for an emerging leader or experienced supervisor ready to step into a broader leadership role within a dynamic hotel environment.
Key Responsibilities
* Support the management of Food & Beverage operations across the hotel, ensuring smooth day-to-day service delivery.
* Maintain Mercure's high standards of guest experience, quality, and service excellence.
* Work closely with the Executive Chef and F&B leadership team to deliver exceptional menus and service execution.
* Lead, motivate, and develop team members, fostering a culture of engagement, accountability, and continuous improvement.
* Assist in managing rosters, labour costs, stock control, and operational efficiency.
* Monitor guest feedback and assist in implementing improvements to enhance satisfaction.
* Support the execution of functions, events, and high-volume service periods.
* Ensure compliance with health & safety, food safety, and licensing requirements.
* Build positive relationships with guests, suppliers, and internal stakeholders.
