Liquid & Larder are searching for a charismatic and experienced Sommelier to join the team at Bistecca, one of Sydney’s most sought after dining experiences, lead by Head Sommelier, Sheila Richter.
About Bistecca
The experience begins in the old-world cocktail bar, stocked with amaro from across the globe, before moving into the intimate 50-seat dining room where Tuscan hospitality meets the glow of the open hearth and our famous butcher’s block. The space flows into a bottle-lined enoteca for private dining, creating an atmosphere that is fast-paced yet warm, rustic, and a little cheeky.
About the Role
As Sommelier, you’ll bring sharp attention to detail and confident communication, making every guest interaction seamless and personal. You’ll work closely with our small wine team to share knowledge, inspire excellence, and engage staff and guests alike. At times you may lead private dining without waitstaff support, requiring a complete understanding of our service sequence.
Your purpose is to go above and beyond, exceed expectations, and have fun while doing it.
Your Day-to-Day
- Maintain accurate and updated wine lists and vintages
- Keep the wine cellar clean, stocked, and service-ready
- Communicate effectively across departments
- Support the Head Sommelier and Restaurant team
- Manage stock, minimise wastage, and support budget/COGS targets
- Assist with service and host private dining when required
About You
- Proven experience in premium or hatted venues
- Calm, confident, and professional demeanour
- CMS or WSET Level 2+ certification
- Passion for hospitality and genuine service
- Knowledge of Italian varietals
- Organised, with excellent communication skills
- Versatile availability, including weekends and evenings
