Job Title: Executive Culinary Leader
We are seeking a highly skilled and experienced culinary professional to join our team as an Executive Culinary Leader.
About the Role
The Executive Culinary Leader will be responsible for designing menus that balance creativity, quality, and cost. This includes estimating food and labor expenses to ensure they stay within budget.
The role also involves coordinating the purchase of food supplies to guarantee a steady stock of fresh, quality ingredients. The successful candidate will monitor the quality of dishes from preparation to plating to ensure they meet high standards.
Key responsibilities include working with managers, dietitians, kitchen staff, and service staff to resolve food preparation issues and ensure smooth operations. Teaching proper cooking methods and offering advice to maintain consistency and quality is also essential.
Culinary Leaders will cook and prepare meals according to menu requirements, ensuring excellent taste and presentation. Upholding strict hygiene and food safety standards to keep the kitchen clean and safe is crucial.
The role also involves assisting in recruiting, training, and mentoring kitchen staff to develop a capable team. Overseeing freezing and preservation of ingredients to minimize waste and prolong freshness is also a key responsibility.
Culinary Leaders must manage kitchen inventory and ensure timely stock rotation to reduce spoilage. Creating daily specials and adapting menus based on seasonal availability and customer feedback is also essential.
The ideal candidate will have at least three years of professional culinary experience in Australia. A Certificate III and IV in Commercial Cookery, as well as a Diploma of Hospitality Management, are also required.
Australian citizens and permanent residents are preferred.
