Fish Filleter / Fish Processor

Start Time: 4:30 AM
Red Coral Seafood is a leading Melbourne seafood wholesaler supplying premium fresh and frozen seafood to restaurants, retailers, and food service businesses across Victoria. We are seeking an experienced and reliable Fish Filleter to join our processing team.
The Role:
•Filleting and processing a wide range of fresh fish
* Trimming, pin-boning, portioning, and packing product
* Maintaining high standards of hygiene, quality, and food safety
* Working efficiently in a fast-paced, chilled environment
* Following workplace health and safety procedures
Hours & Roster:
•4:30 AM start
* 5 days per week
* With Saturday rotation roster
About You:
•Previous fish filleting or seafood processing experience preferred
* Strong knife skills and attention to detail
* Reliable, punctual, and able to handle early starts
* Physically fit and comfortable with manual handling
* Ability to work both independently and as part of a team
