**About the Role**
- Tuesday

- 6.00am-3.00pm Roster
- Daily preparation and portioning of the beef cool room
- Managing of stock rotation and the dry aging rooms
- Breaking of whole beef carcases and ageing
- Some charcuterie and smallgoods production
- Daily stocktakes an monthly reports but mínimal paperwork
- Working alongside the Rockpool chefs to ensure the quality is of restaurant standards
