Key Responsibilities
* Oversee the management of multiple cafes, bars, and restaurant kitchens, including production and a la carte services.
* Provide coaching, mentoring, and recruitment support to the kitchen team, as well as ordering, menu creation, costings, and backend kitchen finances.
* Ensure compliance with food hygiene and safety practices, as well as strict airport security protocols.
* Assist the broader team as required.
About the Role
* Sous Chef coverage at Cairns Airport managing the culinary operations of multiple venues.
* Develop, enhance, and create menus specifically catering to the high-volume fast-paced environment of an airport.
* Develop a team of culinary professionals to support the Sous and Head Chef.
* Ensure full compliance with the food safety program.
* Oversee and manage the creation and delivery of menus in line with seasons and local events.
Desired Skills and Experience
* Minimum Certificate IV in Commercial Cookery.
* Food Safety Supervisory Certification.
* Experience in high-volume, quick-service, a la carte, and production cafes and restaurants (preferred).
* Fantastic attitude with an ability to turn on a dime to deliver fresh, quality products to the traveling public.
* Good knowledge of menu costings, menu development, and procurement.
* Food Safety Supervisor or FWHP (can be renewed on the job).
