Typical Day
As Sous Chef, you will be responsible for planning and directing food preparation in our kitchen. This will involve supervising other kitchen staff, as well as addressing operational issues. The ideal candidate will have a strong background in large multi-function high‐end venues and experience producing consistent, high‐quality culinary items.
We are looking for an evening Sous Chef to run the PM shift starting 2 PM – 10 PM. Pick your days off and we will offer you a set roster permanently.
Main Responsibilities
* Ensuring your area is properly organized, staffed and directed.
* Ordering required food and equipment daily to satisfy the production plan.
* Providing decisive leadership and on‐job training to lower‐level staff members.
* Executing and supervising food production, packing & tray‐set activities.
* Preparing complex meals or dishes to specifications provided.
* Monitoring and ensuring KPI compliance across the business, including recipe specifications.
* Monitoring and controlling labour, food costs and shrinkage to budget.
* Participating in the development of food products and menus as needed for customer menu presentations.
Qualifications
* Demonstrated success in a similar role.
* Trade‐qualified Chef with at least 3 years' experience in a high‐volume food production environment.
* Advanced knowledge of HACCP / QSAI / Food Safety and OHS.
* Prior experience with airline catering and a service‐oriented approach.
* Experience working in a team environment with demonstrated leadership skills.
* Experience in a HALAL working environment and knowledge of segregation and separation of equipment.
* Good financial understanding and cost consciousness.
* Strong communication and organizational skills.
* Good knowledge of Microsoft Office and Windows‐based computer applications.
* Required to obtain a clear National Police Check.
* Availability to work 38 hours/week; this role is full‐time permanent.
