The Northo is a busy country pub serving locals, city day trippers, and people travelling along the Hume Highway. With over 150 years of history and a great reputation as the top reviewed pub & bar in Benalla, our comfortable dining room and lounge bar is fully booked most nights. We focus on good old fashioned table service and a delicious variety of wholesome foods made in house with quality ingredients. Qualifications & experience
* Proven experience as Head Chef, Exceptional kitchen management and ability to track expenses and manage a budget, Up-to-date with culinary trends and optimized kitchen processes,
* Ability in delegating responsibilities and monitoring progress, Outstanding communication and leadership skills,
* Credentials in food handling, health and safety training or be willing to obtain, Certified qualifications in Commercial cookery or equivalent experience,
Tasks & responsibilities
* Control and direct the food preparation process and any other related activities,
* Construct seasonal and specials menus that enhance customers' culinary experience ensuring variety and quality of dishes,
* Approve and "polish" dishes before they reach the customer,
* Submit cost proposals for menu items,
* Monitor inventory levels of commonly used items,
* Plan orders of ingredients according to identified shortages,
* Manage and mentor kitchen staff and oversee the work of kitchen team,
* Design standardized food presentation guidelines for each dish,
* Maintain records and comply with nutrition and sanitation regulations and safety standards,
* Foster a climate of cooperation and respect between co-workers,
* Look for ways to reduce spoilage of infrequently used items,

* 4 weekly rotating roster with 1 weekend off a month, Wednesday - Sunday x 3 Monday - Friday x 1, 4 weeks annual leave, 10 days personal leave.
* Christmas Day, Boxing Day and New Year's Day off every year.
* 6-monthly whole team celebrations. We close our business twice a year so our staff can get together for fun, team building outings and events.
* Temporary hotel accommodation provided for applicants wanting to relocate.
