Responsibilities
* Actively contribute to menu planning and execution.
* Control food and wage costs, ensuring budget compliance.
* Assist in event planning and execution.
* Apply menu knowledge to control portion sizes and preparation for high quality products.
* Implement hotel and department regulations, policies and procedures.
* Provide menu information to events and floor operations teams for guest service.
* Maintain industry knowledge and stay updated on trends and dietary developments.
* Keep all working areas clean and tidy; wash dishes during service as required.
* Train and enforce compliance with food safety, hygiene, cleanliness and kitchen compliance standards.
Qualifications
* Flexible and adaptable, willing to work as part of a kitchen team.
* Remain calm and level-headed under pressure in a fast‐paced environment.
* Strong communication, organisational skills and grooming standards.
* Build effective relationships with other departments, suppliers, etc.
* Strong work ethic with flexibility for rotating rosters and shifts.
* Well‐versed in Food Hygiene, HACCP and OH&S.
* Experience training and developing junior chefs.
* Relevant trade qualifications.
* Flexibility to work breakfast and dinner shifts on a 7‐day roster.
