Located in the historic Strand Arcade, Pendolino is celebrated for its commitment to artisanal Italian cuisine, premium produce, and an unwavering dedication to excellence. The successful candidate will demonstrate both creativity and technical skill, producing exceptional desserts, breads, and pastries that reflect the restaurant's signature elegance and innovation.
Key Responsibilities:
- Lead the creation and execution of Pendolino's dessert and pastry menu, ensuring consistency, quality, and innovation.
- Collaborate closely with the Executive Chef and senior kitchen team to design menus that showcase premium seasonal produce.
- Manage pastry operations, including production schedules, stock control, and compliance with food safety standards.
- Mentor and inspire junior chefs, fostering a culture of excellence, precision, and creativity.
- Uphold the restaurant's reputation for delivering a world-class dining experience.
Requirements:
- Formal qualifications in Patisserie or equivalent trade certification.
- Demonstrated experience as a Pastry Chef in a fine-dining or luxury hospitality environment.
- Exceptional technical skill across desserts, breads, pastries, and chocolate work.
- Strong organisational and leadership capabilities.
- A genuine passion for Italian flavours, artisanal methods, and culinary innovation.
