Position Overview
The Baker chef/ Patisserie chef is responsible for producing exceptional baked goods and pastries for CU29's café operations, ensuring they meet the venue's high standards for flavor, presentation, and consistency. This role requires creativity, technical baking expertise, and strong organizational skills to deliver a premium selection of bread, cakes, pastries, and other café bakery items.
The Baker chef/ Patisserie chef will work closely with the Café Manager and Head Chef to align production with seasonal menus, customer demand, and CU29's commitment to quality and innovation.
Key Responsibilities
Baking & Pastry Production
* Prepare, bake, and decorate a range of breads, pastries, cakes, muffins, slices, and other café bakery products.
* Follow recipes and specifications while maintaining consistency in taste, texture, and presentation.
* Develop new bakery items in line with seasonal produce and customer preferences.
Preparation & Planning
* Plan daily and weekly bakery production schedules to meet café demand and special orders.
* Manage mise en place, ensuring readiness for café service.
* Monitor ingredient levels and communicate ordering needs to management.
Quality, Safety & Compliance
* Maintain high standards of food hygiene, safety, and allergen control in accordance with HACCP and local health regulations.
* Ensure all products are correctly stored, labelled, and rotated to minimize waste.
* Maintain bakery equipment in clean and operational condition.
Collaboration & Service Support
* Work closely with baristas and café staff to ensure bakery items complement the café menu.
* Assist in the display and presentation of bakery items for maximum visual appeal.
* Support special events, catering orders, and seasonal menu changes.
Key Skills & Attributes
* Strong baking and pastry-making skills with attention to detail.
* Creativity in developing visually appealing and delicious products.
* Excellent time management to handle early morning starts and meet production deadlines.
* Strong understanding of food safety, hygiene, and allergen management.
* Ability to work both independently and as part of a team.
Qualifications & Experience
* Certificate III or higher in Patisserie or Commercial Cookery (essential).
* Minimum 2 years' experience as a baker, pastry chef, or similar role in a café, patisserie, or restaurant environment.
* Knowledge of bakery equipment, production techniques, and ingredient handling.
* Flexible availability, including early mornings, weekends, and public holidays.
