THE GIG — Head Pizza Chef ~ SI PARADISO
Si Paradiso is where Italo food, natural wines, cold beers, cocktails and music come together to create moments that stay with people long after the night is over. Our pizza program is at the heart of what we do — and we're looking for a Head Pizza Chef to own it, elevate it, and make it theirs.
This is a leadership role. You'll oversee all aspects of our pizza offering — from dough development and menu creation to training, consistency, and quality control. You'll work closely with our senior leadership team to push the program forward while maintaining the soul and simplicity that great pizza demands.
We're not looking for someone to just run a section. We want someone who geeks out over fermentation, obsesses over the details, and takes pride in putting out an exceptional product every single service.
The Role
* Full ownership of Si Paradiso's pizza program — dough, toppings, specials, R&D
* Develop and refine recipes, with a focus on quality, consistency and seasonality
* Lead, train and mentor the pizza team to maintain high standards
* Manage ordering, stock control and food cost targets for the pizza section
* Collaborate with venue management on menu direction and seasonal changes
* Maintain strict WH&S compliance and cleanliness standards
* Work a rotating roster across our operating hours — Wednesday to Sunday dinners and weekend lunches
What We're Looking For
* 3+ years' experience as a pizza chef, with at least 1 year in a senior or head role
* Deep understanding of dough production — preferably long-ferment and Neapolitan or Roman styles
* Proven ability to lead a small team and maintain consistency under pressure
* Strong knowledge of Italian ingredients and flavour profiles
* Excellent organisational skills — you can manage prep, pars, and waste without being told
* A genuine passion for hospitality and creating memorable guest experiences
