Marino Fine Foods located in Croydon Park, is a wholesale site and manufacturing facility. Our clientele in the food service industry respects us for our quality products including free‑range salami, whole muscle salumi, smallgoods, and fresh sausages.
We are seeking a dynamic and self‑motivated experienced Smallgoods maker / Butcher to join the team. This is a full‑time role with minimum 40 hours per week.
To be considered for this position you must hold a high work ethic and be able to contribute to a team environment. You must be available Monday through Friday with 6am starts, with occasional Saturday mornings. The ideal candidate will require a broad range of retail and wholesale skills and a passion for flavour. Experience in smallgoods production essential. Willing to consider sponsorship for International applicants with appropriate qualifications and proven skills.
Required skills, experience, and personal attributes
* Industry qualification (or equivalent) and a minimum of 2 years' experience.
* Knowledge in smallgoods making.
* Ability to understand written and verbal instructions.
* High attention to detail and an ability to learn and work within defined time frames.
* Punctual and reliable.
The Position
* Follow safe work policies and procedures and apply hygiene and sanitation practices.
* Select, weigh and package meat for sale.
* Portion cut.
* Marinate, season and cure special cuts.
* Trim meat for further processing.
* Tie salami with string (willing to learn).
* Select and prepare meat to produce smallgoods.
* Prepare sausages using a sausage‑filling machine.
* Identify appropriate meat cuts.
* Remove bones.
* Cut, mince and grind meat.
* End‑of‑day cleaning of workspaces and equipment using pressure cleaner.
* Operate and prepare machinery for grinding, mixing, mincing and tenderising (including bandsaw use).
