The Role
Operations Manager – Food & Beverage
Reporting to the General Manager, the Operations Manager – Food & Beverage is a critical senior leadership role responsible for overseeing all food and beverage operations on Rottnest Island — and acting as the most senior on-island operational leader when the General Manager and Operations Manager are not present.
This role extends beyond food and beverage. While a strong hospitality background is essential, we are looking for a highly capable operational leader who can confidently oversee island operations, support cross-functional teams, and ensure the smooth, safe, and commercially sound running of the site during leadership absences.
This is a hands-on, visible leadership role suited to someone who thrives in complex environments, leads from the front, and takes ownership of outcomes. You will work closely with venue managers, department leaders, and frontline teams to drive performance, maintain standards, and deliver outstanding guest experiences in a fast-paced, seasonal setting.
Key Responsibilities
* Provide senior on-site leadership across the island when the GM and Operations Manager are off-island
* Oversee day-to-day operations across multiple food and beverage venues
* Lead, coach, and develop F&B leaders and frontline teams
* Maintain high standards of service, food quality, safety, and compliance
* Manage rosters, labour costs, workforce planning, and peak-period readiness
* Oversee budgets, cost control, stock management, and financial performance
* Ensure compliance with WHS, food safety, and liquor licensing requirements
* Act as a key operational escalation point and decision-maker
* Drive continuous improvement across operations, guest experience, and team engagement
* Liaise closely with the General Manager, Operations Manager, and Head Office
Skills & Experience
* Proven experience in a senior Food & Beverage or Hospitality Operations role
* Demonstrated ability to lead large, multi-venue or multi-site operations
* Strong operational mindset with the confidence to make decisions and take accountability
* Solid commercial acumen including budgeting, forecasting, and cost control
* Excellent communication and stakeholder management skills
* Calm, adaptable, and solutions-focused approach in dynamic environments
* Experience in resort, island, or remote operations highly regarded
Qualifications
* Diploma of Hospitality Management or equivalent (advantageous)
* Approved Manager Card (WA Liquor Licensing) – required
* Food Safety Certificate – required
* Manual/Open Driver's Licence – required
* First Aid or Advanced First Aid Certificate – favourable
