Hours: Midnight to 7:30AM

Maggio's is looking for a reliable and hardworking overnight Full Time Bread Baker to join our team. The successful candidate will prepare and bake fresh bread daily while following recipes and food safety standards.
Skills & Experience
* Experience baking artisan / sourdough / commercial volume bread
* Understanding of fermentation, hydration, and dough handling
* Ability to scale recipes consistently
* Experience with early starts / night shifts
* Previous work in bakery, café supply, or wholesale (big plus)
Product Quality
* Consistent crumb, crust, and flavour
* Can follow specs exactly (weight, shape, bake colour)
* Knowledge of shelf life and storage
* Can adapt recipes to suit sandwiches, toast, or café service
Reliability & Work Ethic
* Punctual and dependable (critical for baking)
* Can work independently
* Handles pressure and tight timelines
* Good attention to detail and cleanliness
Food Safety & Compliance
* Food Safety Certificate
* Knowledge of HACCP / hygiene standards
* Clean work habits and allergen awareness
Equipment & Process
* Experience using commercial ovens, mixers, provers
* Comfortable with hand shaping and machine shaping
* Can troubleshoot dough issues (over-proofing, dense crumb, etc.)
Attitude & Fit
* Passion for bread (not just "a job")
