GDM Hotels Pty Ltd is seeking a full-time Sous Chef to join our team to work at the Tattersalls Hotel in West Wyalong, NSW.
The Tattersalls Hotel is a high-volume country pub located in West Wyalong — six hours west of Sydney. We pride ourselves on delivering quality pub and bistro-style meals to locals, mine workers, and visitors. Due to business growth, we are looking for a talented and motivated Sous Chef to join our professional kitchen team.
The Role
As Sous Chef, you will work alongside Senior sous chef, the Head Chef and senior kitchen team to oversee daily operations, ensure menu quality, and lead kitchen staff during service. You will have strong technical skills, leadership ability, and experience working in high-paced environments.
Key Responsibilities
* Assisting in the preparation and cooking of meals according to Menu
* Assist senior sous chef and the Head Chef in menu planning, development, and execution.
* Prepare and present dishes to high standards in a timely manner.
* Supervise and mentor kitchen staff, providing training and guidance.
* Ensure compliance with HACCP and food safety regulations.
* Manage inventory, control waste, and monitor stock rotation.
* Lead kitchen operations during busy service periods and in the absence of the Senior Sous chef
Qualifications & Experience
* Certificate IV in Commercial Cookery and diploma in hospitality
* At least 2 years' experience as a chef in a commercial kitchen.
* Experience in an Australian pub or casual dining venue desirable.
* Ability to work in a high-volume kitchen environment.
* Available to work rostered shifts, including weekends and public holidays.
* Strong communication and leadership skills.
* Flexibility to work on a rotating roster, including weekends and public holidays.
Salary & Benefits
* $75,000 – $80,000 p.a. plus 12.5% superannuation.
* 4 weeks annual leave.
