We are seeking an experienced and creative Pastry Chef / Pastry Cook to join their dedicated team.
In this role, you will be responsible for crafting a variety of artisanal viennoiserie, pastries, and desserts while maintaining the highest standards of quality, consistency, and food safety.
The ideal candidate will have a strong work ethic, a keen artistic eye, and a passion for the art of pastry.
Key Duties & Responsibilities:
Production & Pastry Arts:
• Prepare, laminate, and shape doughs to create a range of artisanal viennoiserie (croissants, danishes, brioche) and pastries.
• Monitor fermentation and proofing processes for laminated doughs and enriched doughs to ensure optimal texture and flavour development.
• Bake, finish, and decorate tarts, cakes, eclairs, and other individual pastries with precision and artistry.
• Prepare fillings, creams, custards, and glazes from scratch.
Quality Control & Preparation:
• Inspect raw ingredients for freshness and accuracy, measuring and weighing components to exact specifications.
• Taste-test and evaluate product consistency, flavour, and visual appeal, adjusting techniques as needed to maintain high standards.
• Develop and follow standardised recipes while also contributing creative ideas for new seasonal offerings.
Equipment & Workspace Maintenance:
• Conduct thorough checks of pastry equipment and work areas before production to ensure compliance with health and safety regulations.
• Clean and maintain all tools, including mixers, sheeters, piping bags, and moulds, to uphold hygiene and operational efficiency.
• Operate and maintain specialised pastry equipment safely, such as planetary mixers, dough sheeters, and convection ovens.
Skills & Requirements:
• Proven 1- 2 years' full-time experience as a Pastry Cook, Pastry Chef, or Pâtissier in an artisanal bakery, patisserie, or hotel setting.
• A relevant qualification such as a Certificate III in Patisserie or above is highly regarded.
• Strong knowledge of pastry techniques, including laminating, tempering chocolate, and preparing a variety of creams and fillings.
• Ability to work early mornings, weekends, and holidays as required by the production schedule.
• Excellent attention to detail and a commitment to producing high-quality, visually stunning products.
• A solid understanding of food safety standards and hygiene best practices.
• Physical stamina to stand for long periods and handle repetitive tasks with care.
