Major Tasks and Duties:
* Prepare Pastry items - make Cakes and Pastry, preparing all our Desserts
* Checking the cleanliness of equipment and operation of premises before & after production runs to ensure compliance with occupational health and safety regulations.
* Checking the quality of raw materials and weighing ingredients to ensure there is no contamination or foreign objects.
* Kneading, maturing, cutting, molding, mixing and shaping dough and pastry goods.
* Preparing pastry fillings.
* Monitoring oven temperatures and product appearance to determine baking times.
* Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products.
* Glazing buns and pastries, and decorating cakes with cream and icing.
* Operating machines which roll and mould dough and cut biscuits.
* Emptying, cleaning and greasing baking trays, tins and other cooking equipment.
* Create new and exciting desserts to renew menus and engage the interest of customers.
Desirable Qualifications and Skills:
* Trade Qualification or equivalent is a minimum requirement.
* Minimum of 5 years of experience as a Pastry Cook or Pastry Chef.
* Strong skills in the production of pastries, desserts and cakes preferred.
* Excellent communication skills and ability to multi-task.
* Ability to work effectively and efficiently in a team environment.
* Have sound knowledge on all Pastry and bakery equipment including mixing and ovens.
* Strong work ethic.
* Great attention to detail and creativity.
* Organising and leadership skills.
