Erina Leagues Club is a vibrant community-focused club on the Central Coast, providing quality dining, social events, functions and memorable experiences for our members and guests. We operate a busy bistro, functions and event spaces, and cater to a large and diverse membership base. We are seeking an experienced, passionate and hands-on Head Chef to lead our kitchen team and deliver consistently high-quality food across all service streams.
What You’ll Be Doing
As Head Chef you will:
* Take full accountability for kitchen financial performance, including labour cost control and achieving agreed GP targets.
* Develop rostering strategies that balance operational needs with wage efficiency.
* Lead, mentor and develop an experienced kitchen team to deliver consistent quality and efficiency.
* Be a visible and hands-on leader during service, setting standards and leading from the front.
* Create, refine and implement menus that showcase fresh, seasonal produce and reflect our brand.
* Manage food cost, stock levels and ordering to achieve budget targets.
* Oversee food preparation, plating standards, waste control and kitchen safety.
* Ensure all food handling, hygiene and WHS standards are upheld at all times.
* Contribute to the ongoing improvement and optimisation of kitchen layout and workflow.
* Collaborate with functions and event teams to deliver exceptional banquet and event dining experiences.
* Drive continuous improvement in kitchen operations and guest satisfaction.
* Contribute to broader business planning discussions, including menu engineering, pricing strategy and long-term kitchen development.
What We’re Looking For
To succeed in this role, you should have:
* Proven experience as a Head Chef or Senior Sous Chef in a high-volume hospitality environment.
* Strong leadership skills with the ability to coach and motivate your team.
* Excellent food costing, stock control and menu planning abilities.
* Demonstrated ability to manage labour costs and deliver financial results.
* Exceptional attention to detail and a passion for high-quality food presentation.
* Sound knowledge of food safety and workplace health standards.
* Level 2 Food Safety Certification (or equivalent).
