The company specialises in private and corporate charters, tourism cruises, special events, and whale watching experiences, delivering professionally managed services and high-quality onboard hospitality.
Position Overview: Sydney Princess Cruises seeks a skilled and experienced Chef to manage and deliver high-quality food services across cruise operations, private charters, and special events.
The role is responsible for menu planning, food preparation and cooking, kitchen and galley operations, food safety compliance, and staff supervision.
The position requires strong culinary expertise, leadership capability in a high-volume and time-sensitive environment, and the ability to consistently deliver premium food quality while meeting operational schedules unique to maritime service.
Main Tasks and Responsibilities: The Chef's duties include, but are not limited to, the following:
• Plan, develop, and update menus aligned with seasonal availability, cruise schedules, customer expectations, and event requirements, ensuring alignment with the company's premium charter and cruise offerings.

• Prepare, cook, and present a diverse range of high-quality dishes for onboard service, private functions, and special events, applying advanced culinary techniques and maintaining excellent presentation standards.

• Supervise and coordinate daily kitchen and galley operations to ensure efficient workflow, timely meal preparation, and service delivery.

• Estimate food and labour requirements and manage ordering, receipt, storage, preservation, and stock rotation of ingredients to maintain quality, minimise waste, ensure continuity of operations, and achieve cost efficiency.

• Monitor the quality of food at all stages of preparation, cooking, and presentation to ensure consistency with menu specifications, portion control, and company standards
• Demonstrate cooking techniques and provide hands-on training, guidance, and supervision to cooks and kitchen support staff to ensure correct preparation methods, recipe compliance, and performance standards.

• Liaise with management, front-of-house, and service staff to coordinate meal timing, menu execution, and special dietary requirements during cruise services.

• Prepare and oversee meals catering to special dietary requirements, allergies, and guest preferences in compliance with food safety, quality, and service standards.

• Ensure full compliance with NSW food safety legislation, maritime hygiene regulations, workplace health and safety requirements, and internal quality and safety procedures.

• Monitor and regulate kitchen equipment, including ovens, grills, refrigeration, and freezers, to ensure safe operation and food safety compliance.

• Participate in the recruitment, training, supervision, performance management, and ongoing development of kitchen and support staff.

• Conduct and participate in kitchen meetings to review operational performance, food quality, menu effectiveness, compliance, and staff development needs.
Qualifications Required for this role:
• AQF associate degree, Advanced Diploma or Diploma in related field OR
• At least 3 years of relevant work experience may substitute for the formal qualifications.
Experience and Other Requirements:
• At least 1 year of relevant experience as a Chef role within a restaurant.

• Excellent knowledge of food safety regulations and kitchen hygiene standards.

• Effective communication and interpersonal skills for collaboration with team members and management.

• Strong organisational and time management skills to meet service schedules and operational demands.
Salary : $76,515 - $80,000 plus super Only eligible and shortlisted applicants will be contacted.
