Lode Pies and Pastries Pty Ltd is a bakery that offers wide selection of savoury and sweet puffs pastries, mastered by Lumi Chef Federico Zanetello. It is a new approach to the aesthetic of veinnoiserie, pie and pastry.
Job tasks and responsibilities

* Preparing and baking a wide variety of bread products, including but not limited to ciabatta, baguettes, multigrain breads, sandwich loaves, and artisan-style breads, in accordance with established recipes and quality standards.
* Mixing, kneading, fermenting, proving, and shaping doughs using appropriate techniques, both by hand and with commercial baking equipment.
* Monitoring baking processes by setting and controlling oven temperatures, baking times, and humidity levels to ensure consistent product quality and appearance.
* Hand-shaping loaves and baked goods and finishing products to required specifications prior to and after baking.
* Planning daily and weekly production requirements, including calculating quantities of dough and ingredients to minimise waste while meeting customer demand.
* Preparing workstations prior to production and ensuring all ingredients, tools, and equipment are ready for use.
* Operating bakery equipment such as mixers, ovens, proofers, and other machinery safely and efficiently.
* Maintaining high standards of cleanliness by routinely cleaning bakery tools, utensils, ovens, benches, and production areas in line with food safety and workplace hygiene regulations.
* Ensuring compliance with food safety standards, hygiene practices, and workplace health and safety requirements at all times.
* Monitoring stock levels of ingredients and baking supplies and assisting with ordering and replenishment as required.
* Assisting with general kitchen and food preparation tasks during peak periods when required.
* Working collaboratively with other bakery and kitchen staff to ensure smooth daily operations and timely production.
* Ability to work independently with minimal supervision as well as part of a team.
Skills required:
Experience: At least 3 years of relevant experience required
